It's not what it looks like. Sort of.

I had a low tonight before dinner (56). So I treated it with a juice box and a few crackers. About a hour later I was ready to eat dinner. I had baked a little frozen (breaded) chicken.

I tested to see what I was at, and to plug in the carbs for my bolus. Imagine my shock when this number appeared on my meter.

My blood sugar had gone up 530 points in 1 hour. I don't think that is even humanly possible.

I washed my hands, tested again, and was greeted with a 122. Whew!

Too bad with the UltraLink the crazy 581 is in my pump memory (and I don't think it can be deleted).

P.S. That's a cup of sugar because I am working on my next batch of Friendship Bread - but was not the cause of the high - it wasn't out yet.

Since I almost always have to bring my dinner to work, I cook in large batches and freeze the food. This was a picnic shoulder fresh ham roast (rear) and a beef pot roast (front). We are on low carb diets, so I have to be careful with sauces. For the fresh ham I used a no-carb spicy BBQ sauce that is really very tasty. For the pot roast, just beef broth and Jack Daniels Mesquite flavored mustard. I browned both roasts in olive oil and herbs and spices. I used a pre-made dry rub for the beef. Then I cooked them at low heat for 4 hours. Very easy and economical. Both are inexpensive cuts.
